Artisan Butcher Recipe 1

Herb Crusted Lamb Racks

Full of flavour, these lamb racks are a perfect treat for a dinner party or just for a quick mid-week meal.  They can be put together in minutes and take just forty-five minutes in the oven to cook – a tasty meal in under an hour!

Serves 2

2 lamb racks
200g bread crumbs
100g fresh chopped rosemary
100g garlic
French mustard
Salt & pepper
Full of flavour

Cut Preparation
Ask your local butcher to prepare a lamb rack French trimmed
and remove the bark and chime from the rack.

Product Preparation
Score the lamb rack on the back and rub salt into the fat sparingly
Mix the bread crumbs, garlic powder, pepper and fresh rosemary into a bowl
Rub the French mustard onto the lamb racks and the roll them in the bowl allowing the bread crumb mix to stick to the lamb racks

Cooking Instructions
Pre-heat the oven to 180◦c
Bake for 45 mins

Tyras Chicken Parcels

Chicken is thought of by many as the go-to option for a quick and simple meal but that doesn’t mean it can’t be a little more refined from time to time.  These Tyras parcels have an air of class without too much fuss.  They can be whipped together in less than ten minutes and take just forty-five minutes in the oven.

Serves 4

4 chicken fillets
150g feta cheese
100g sun dried tomatoes
Olive oil
Garlic puree
1 sheet of puff pastry

Cut Preparation
Trim and remove any excess fat from the chicken fillets

Product Preparation
Make an incision along the top of the chicken breast
Glaze the breasts in olive oil and insert a slice of feta cheese and two sundried tomatoes and a dash of garlic puree
Score or lattice cut the puff pastry and place on top

Cooking Instructions
Pre-heat the oven to 180◦c
Bake for 45 mins
