Full of flavour, these lamb racks are a perfect treat for a dinner party or just for a quick mid-week meal. They can be put together in minutes and take just forty-five minutes in the oven to cook – a tasty meal in under an hour!
2 lamb racks
200g bread crumbs
100g fresh chopped rosemary
Salt & pepper

Ask your local butcher to prepare a lamb rack French trimmed
and remove the bark and chime from the rack.
Score the lamb rack on the back and rub salt into the fat sparingly
Mix the bread crumbs, garlic powder, pepper and fresh rosemary into a bowl
Rub the French mustard onto the lamb racks and the roll them in the bowl allowing the bread crumb mix to stick to the lamb racks
Pre-heat the oven to 180◦c
Bake for 45 mins
